When we first opened, I told Helen, that one day the Mayor of Pensacola Ashton Hayward would stop by for lunch. About 3 weeks ago, he did just that along with a staff member. Well that was great in itself. So I said to Helen, where do we go from here? I thought about it for a while and came up with celebrities. We need celebrities to stop on by for lunch. So here comes 4 men in the door and low and behold, one looks like Fred Levin. Fred is considered one of the top 10 lawyers in America and is also very wealthy. Maybe the wealthiest in Pensacola. They said they were waiting for another person to arrive and once again, here comes Ashton Hayward. This of course had Helen in a tizzy. She said she wanted a photo and we had one of our good customers take the photo of her with Ashton and Fred, arm in arm. So there you have it. Porchettas on its way with celebrity status.
OK, A WHILE BACK I PURCHASED THE ELECTRIC BLACK BOX. IT IS A VERTICAL ELECTRIC SMOKER. THESE SEEM TO BE THE EASIEST KIND TO USE. THEY USE A SMALL AMOUNT OF ELECTRICITY, WATER AND WOOD CHIPS. THE SMALLER LOWER DOOR HAS THE HEATING ELEMENT AND HOLDS THE WATER TRAY AND WOOD CHIP TRAY. THE UPPER LARGER DOOR HOLDS THREE RACKS FOR DOING CHICKEN, RIBS, ROASTS, ETC. SO FAR, I HAVE BEEN DOING THE SMOKED ERNIE SHOLDER ROASTS, LEG QUARTERS FOR OUR OUR CHICKEN LEG PLATES AND RECENTLY RIBS. I AM DOING WELL WITH THE ERNIES, AND THE LEGS. THE RIBS INVOLVE A LITTLE MORE EFFORT. I AM CURRENTLY USING VARIOUS BRINES RUBS AND APPLE WOOD, PECAN AND HICKORY WOOD CHIPS FOR THE SMOKING PART. Some big restaurants can order a new malt machine just like that, but for us it is a rich event. It represents our past labor and we really appreciate each and everything we have. We call it a blessing. I finally had the money and ordered this used machine and it took forever to get here. They shipped it parcel post in a used box and you guessed it, it came in broken up. I had to fix the main top plastic part with a number of repairs and replacement parts. Lucky for me we have two places in town for parts. In the meantime, since the last blog, got in my stainless cups, my 16 oz. Coke glasses, new spoons and straws. I also accumulated 8 flavorings. So we are about ready to launch our handmade shakes and malts. They will go for $4 and will be $3 in a sandwich combo or plate deal. We will be offering shakes and malts in these flavors. Vanilla, chocolate, strawberry, black cherry, raspberry, coffee, peanut butter and peanut butter/chocolate. I am currently practicing making thick malts.
PORCHETTAS HAS GOTTEN A 3 HEAD MALT MIXER AND WE WILL BE OFFERING SHAKES AND MALTS. THE REAL THING WITH SCOOP ICE CREAM, FLAVORINGS LIKE VANILLA, CHOCOLATE, STRAWBERRY, BLACK CHERRY, RASPBERRY AND COFFEE AND OF COURSE THE POWDERED MALT IF YOU LIKE THAT. WE HAD RECENTLY INTRODUCED THE 9 OUNCE CLOUSEAU SOUS VIDE STEAK BURGER AND WILL SOON HAVE THE 10 TO 12 OUNCE STEAK SANDWICH. BUT FIRST WHAT MAKES THESE SO DIFFERENT THAN SAY ANYONE ELSES. WE COOK THESE BY A FRENCH PROCESS VERY SLOWLY AND VERY LOW HEAT. THE COOKING TEMP IS 138 DEGREES FOR MANY HOURS IN A VACUUM. WHAT THIS DOES IS KILLS THE PATHOGENS, AND COOKS THE PROTEIN COLLAGENS TO A TENDER TEXTURE. MOST OF THE FATS MIGRATE OUT AND SOME ARE INCORPORATED INTO THE PROTEIN FIBERS. THE MEAT RETAINS A VERY NICE PINK COLOR AND IS SO,SO TENDER. THE STEAK LOOKS LIKE PRIME RIB AND IS AS TENDER. WE THEN PAN SEAR THE MEAT TO CARMELIZE THE SUGARS IN THE PROTEIN TO LOOK LIKE A REGULAR BURGER. THE BURGER COMES WITH SPECIAL MUSTARD, ROMAIN HEARTS, BURGER, CHEESE, MAYO ON A SPECIAL BREAD. THE STEAK COMES WITH ROMAIN, STEAK, WORCESTERSHIRE SAUCE AND IS ON A SPECIAL CHICAGO ITALIAN CRUSTY LOAF CUT. Helen and I discussed it today and decided to extend our lunch time by one hour. We have been having people tell us they would like to get something for their dinner if we stayed open longer.
